RESUMO:

This study aimed to evaluate the addition of green tea extract (GTE) in chicken burgers and their impact on physicochemical and sensory properties. Initially, five different extracts were done with different conditions of extraction. The extraction conducted with 75% ethanol as solvent and 15 min at 80 ºC conditions (E1) showed higher total phenolic and flavonoid contents and 75.73% of inhibition of DPPH radical. Then, this extract was chosen for application in chicken burgers at 0.5% (GT-0.5) and 1.0% (GT-1.0) levels and analyzed during refrigerated storage for 10 days. Lower cooking yields have been found in GT-1.0 treatment when compared to GT-0.5 and control (FC) treatments. The incorporation of higher levels of GTE (1.0%) also affected texture properties of chicken burgers and lower hardness values have been observed. GTE was effective to delay lipid oxidation of chicken burger during 10 days of refrigerated storage. However, a pro-oxidant effect was observed on first days of storage. GT-1.0 treatments showed lower counts of mesophilic, psychrotrophic, coliform and Gram-positive cocci bacteria until the day 7 of storage. Color attributes were also affected by GTE addition and lower lightness and redness parameters were observed, and as consequence, color was also affected in sensory analysis.
