RESUMO:

The search for more healthy foods made the industries look for new and natural products. As a result, the use of microorganisms as a pigment source has grown. The objective of this work was to evaluate the physicochemical stability of the pigment extract produced by Pseudofusicoccum sp. In this way, the pigment residue of the extract was measured in spectrophotometer and colorimeter after it was submitted for 24h to pH (3 to 10) and temperature (30 to 90 °C) variations; interaction with additives and ions; and storage for 3 months in refrigerator, freezer and with incidence of light. It was observed that the pigment extract was stable at acidic pH, with a final pigment residue of 60% at pH 10. For temperature, there was no influence on storage in refrigerator and freezer, but at 70, 80 and 90 °C there was a red pigment hue decrease of 64, 69 and 71% in 24 hours. Additives and ions had slightly influence on color stability. At the end of the 3 month storage, the light degraded the red pigment by 77%. It was noticed that in all conditions, that the degradation of the red pigment of the extract generated yellow pigment. With this it can be used in foods that have a more acidic pH and that is not subjected to high temperatures, as a substitute for artificial colors.
