SUMMARY:

Informal work at home is an economic activity that has grown and constitutes a form of precariousness, representing health risks for both workers and consumers, especially when it refers to the food trade. Thus, this study aimed to characterize informal home-based work and food trade, in the delivery modality, in the city of Salvador-Bahia and the metropolitan region. An exploratory study, with a quantitative approach, was carried out with 50 workers who prepared and sold food in the delivery system. A self-administered questionnaire was used, with circulation via Internet. Participants were 32.9 years old on average, 88% were women, 72% with incomplete or completed higher education, and 26% with complete secondary education, indicating highly educated people. As for work, 64% had been working in the segment for less than three years, which reflects the impacts of the pandemic on the economy. The average daily shift was 8.1 hours and 56% worked on average five days a week. The most commercialized foods included traditional preparations such as patisserie (60%), ready meals (24%), juice/ice cream (12%), acarajé/abará (8%), soda/mineral water (8%), snacks (8%). Most used social networks, such as WhatsApp, Instagram, and Facebook, to promote their products. For delivery, the main means of transport included app car/motorbike (iFood, Uber Eats, Rappi, 99Food) and own car. With regard to hygiene, the majority demonstrated to know the hygienic requirements necessary for the commercialization of food. The study generates knowledge and allows recognition of a segment little described in the literature, providing subsidies for public actions, insofar as it involves benefits and risks to the workers involved and to society.
