SUMMARY:

 The objective of this study was to characterize the physical chemical and phenolic profiles, antioxidant activity and sensory acceptability of Cabernet Sauvignon red wines produced with different winemaking practices and grape from a new Brazilian winery region (Garanhuns, PE), with tropical altitude climate. Phenolic compounds are import ants to the antioxidant activity of red wines, sensory quality and to the health of their consumers. The red wines were winemaking using four treatments: thermovinification (65ºC, 2h) (TSC), thermovinification and aging using American and French oak chips  (TCC), traditional winemaking witn maceration (6 days at 23ºC) during alcoholic fermentation and aging using oak chips (VTCC), traditional winemaking without aging -control (VTSC). Thermovinification promoted a better nutraceutical quality to the Cabernet Sauvignon wines. This practice increased the antioxidant capacity by DPPH, ABTS and FRAP assays and the content of the majority of the phenolic compounds quantified (n = 22), except cafeic and r-cumaric acids, piceatannol and cis-resveratrol. In addition, it provided greater color intensity, total polyphenols index and alcoholic content to the wine, important factors to improve their shelf life. The consumers preferred the red wine winemaking only using thermovinification, without the aging using oak chips.
